My skill set is (and always will be) in a constant state of development. I try to keep my head down and focus on daily improvements. Whether its communication, foreshadowing prep for the week or menu development, I am consistently looking at ways in which I can improve my mindset and approach to every task at hand. Ive always been a people person with exceptional communication skills and I realize more and more how vital it is to communicate well in the kitchen. Im (generally) talkative and funny when times are appropriate, and I tend to be direct in my approach when issues arise. Id rather solve an issue now, as opposed to later, before problems are allowed to metastasize. Im no nonsense during dinner service, and I believe I handle myself well in stressful conditions and situations Besides running the wheel during dinner service, one of my main responsibilities as lead cook for Eclipse was writing and executing the prep list for saut and grill. I did this with minimal to no supervision from the sous chef and chef. All soups, sauces, proteins, vegetables, starches and braises (for dinner service) were coordinated daily by myself and the other line cooks. I prided myself on my attention to detail and continuously worked with the sous chef at adjusting recipes to increase yield, extend shelf life, drive down food cost or improve flavor profiles. I love to work hard and I love to make people happy. Whether its a customer, a server, the chef or dishwasherI aim to please people through my words, actions and (ultimately) food.
